Julia Child's sautéed mushrooms

ecco una ricetta semplicissima e comunque ottima, funghi champignon saltati, qui nella versione di Julia Child

ingredienti:
30 gr burro
20 gr olio
300 gr funghi champignon (peso a "pulito")
sale
pepe
a piacere: scalogno o cipolla tritati (io non li ho usati)

come prima cosa ripulire bene i funghi e tagliarli a fette spesse, almeno 8 mm - 1 cm
se fossero piccoli tagliarli semplicemente in due o in quarti

in una grossa padella antiaderente far sciogliere il burro con l'olio, far riscaldare tantissimo

versare i funghi, pochi per volta (è importantissimo, altrimenti scaricano troppo liquido di vegetazione e non avremo alla fine l'effetto di fungo croccante e compatto), e farli rosolare bene rigirandoli delicatamente almeno un paio di volte
via via che saranno cotti levarli dal tegame di cottura e farli riposare in un piatto
intanto, andare avanti con la cottura degli altri

nella ricetta originale non era specificato quando aggiustare di sale e pepe, io mi sono regolata rimettendo tutti i funghi nel tegame, ho fatto riprendere calore ed ho aggiustato il sapore

champignon sautés au beurre (sautéed mushrooms)

use them mushrooms either as a vegetable alone or in a combination with other vegetables, or as an integral part of such dishes as coq au vin, boeuf bourguignon, poulet an cocotte. successfully wqu5éed mushrooms are lightly browned and exude non of their juice while there are being cooked; to achieve this mushrooms must be dry, the butter very hot, and the mushroom must not be crowded in the pan. if you sauté too many at once they steam rather than fry; their jouces escape and they do not brown. so if you are preparing a large amount, or if your heat source is feeble, sauté the mushrooms in several batches.

a 10 inch enameled skillet

2 tb butter
1 tb oil
½ lb. fresh mushrooms, washed, well dried, left whole if small, sliced or quartered if large

optional: 1 to 2 tb minced shallots or green onions
salt and pepper
place the skillet over high heat with the butter and oil. as soon as you see that the butter foam has begun to subside, indicating it is hot enough, add the mushrooms. toss and shake the pan for 4 to 5 minutes. during their sauté the mushrooms whill at first absorb the fat. in 2 to 3 minutes the fat will reapperar on their surface, and the mushrooms will begin to brown. as soon as they have browned lightly, remove from heat.
toss the shallots or green onions with the mushrooms. sauté over moderate heat for 2 minutes.
sautéed mushrooms may be cooked in advance, set aside, then reheated when needed. scason to taste just before serving.
